Ingredients

  • 1 tablespoon canola oil
  • 2 pounds ground beef
  • 1 onion, peeled and chopped
  • 1/2 green bell pepper, cored, seeded and chopped
  • 1/2 red bell pepper, cored, seeded and chopped
  • 3 cups uncooked rice
  • 1 can (14.5 ounces) diced tomatoes
  • 4 1/2 cups beef broth or water
  • 1 can (14.5 ounces) cut corn, drained
  • 1 teaspoon chili powder
  • 1 tablespoon salt
  • 1/2 teaspoon pepper

Instructions

  1. In a wide, heavy-bottomed pan over medium heat, heat oil.

  2. Add onions and bell peppers and cook until softened.

  3. Add ground beef and cook, breaking apart with the back of the spoon, until lightly browned. Discard fat except for about 1 tablespoon.

  4. Add rice and cook, stirring regularly, until lightly toasted.

  5. Add diced tomatoes, broth, corn, chili powder, salt, pepper. Stir to combine. 

  6. Bring to a boil. When bubbling, lower heat, cover with tight-fitting lid, simmer for about 15 to 20 minutes or until liquid is absorbed and rice grains are tender and fluffy. 

  7. Remove from heat and let stand, covered, for about 5 minutes. Fluff rice with a fork to distribute. Serve hot.
