2cupssugar
4eggs
1 1/2cupsvegetable oil
2cupsflour
2teaspoonscinnamon
2teaspoonsbaking powder
1 1/2teaspoonsbaking soda
1teaspoonsalt
2cupsfresh carrots, grated
1cupcrushed pineapple, drained
1/2cupwalnuts, chopped
1/4cupraisins
For Cream Cheese Frosting
1/2cupbutter, softened
8ozcream cheese, softened
1teaspoonvanilla extract
2cupspowdered sugar
Instructions
Preheat oven to 350 F. Grease a 9 x 13 baking pan.
In a large bowl and using an electric mixer, beat together sugar, eggs, and oil until blended.
In another bowl, combine flour, cinnamon, baking powder, baking soda, and salt.
Mix flour mixture with wet ingredients just until blended.
Stir in carrots, pineapple, raisins, and walnuts.
Pour into prepared baking pan and bake in preheated oven for about 1 hour or until a toothpick inserted in the center comes out clean.
Remove from oven and allow to cool completely. Frost with cream cheese frosting and garnish with additional chopped walnuts.

In a bowl, using an electric mixer at low speed, beat butter, cream cheese, and vanilla. Gradually add powdered sugar and continue to beat until smooth and creamy.
