Easy Peasy Cheesy Mayo Chicken is quick and easy to make and is sure to become a family favorite. It’s moist, flavorful and melt-in-your-mouth tender using one simple trick!

I like to throw around the words “quick and easy” in describing a lot of my recipes but, sometimes, I forget to take into account that “quick and easy” is subjective. A dish which pulls together in a breeze for someone who’s been cooking for years may take a bit more work for someone who has just started their cooking journey.

This baked chicken with mayo, however, is the real deal. It’s the epitome of quick and easy!

How to Make Easy Cheesy Mayo Chicken

Making this mayo chicken can’t get any simpler or quicker than 3 easy steps!

  1. In a bowl, combine the cheese, garlic powder, and herbs together until well-blended.
  2. Slather the cheese-mayo mixture on boneless chicken breasts.
  3. Bake in a 400 F oven to golden perfection!

Seriously, the hardest part is trying to refrain from opening the oven to take a peek! Just make sure to pound the chicken to a uniform thickness to ensure even cooking and you’re all set for a dinner meal that’s full on flavor!

I’ve used mayo as topping from salmon, tilapia to chicken and always with spectacular results. Believe me, once you try this simple trick, it will definitely become your favorite method for baking meat and seafood, too. You will be hard-pressed to overcook and dry out anything in the oven again!

The mayo creates a delicious crust which keeps the meat melt-in-your-mouth tender while caramelizing into a golden, creamy mess. With every bite a delightful combination of succulent chicken and cheesy topping, this easy peasy cheesy chicken dish makes a dinner meal the whole family is sure to love.

Ingredients

  • 4 (4-ounces each) boneless, skinless chicken breasts
  • pepper to taste
  • 1 cup mayonnaise
  • 1 cup shredded cheddar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder

Instructions

  • Place chicken between two sheets of plastic film. Starting from the thickest part, pound the chicken with a meat mallet to flatten. Season with pepper to taste. 
  • Arrange in a single layer on a lightly greased baking sheet or oven-safe baking dish.
  • In a small bowl, combine mayonnaise, cheese, Italian seasoning, and garlic powder.
  •  Spoon the mixture over chicken fillets, spreading to cover the surface completely.
  • Bake in a 400 F oven on middle rack for about 20 minutes or until thermometer inserted reads 165 F. If topping is browning too much before chicken is cooked through, loosely tent with foil. 
  • Remove from heat and allow to rest for about 3 to 5 minutes before slicing. Serve hot.

    This is hands-down the best easiest chicken recipe in the world. Everyone in my family always beg for it at all events, so it’s a big success even when it comes to old-fashioned cooks. Just make sure to make it a little crispy on the top and it’s good to go;)

    Good recipe! You make such a great point at the beginning of your post about how subjective the idea of “easy” is depending on the context. I just had this conversation with a tech the other day who was using words like “it’s simple” and “that’s so easy.” I gently explained to him that it might be easy for him, but not for others. Words matter 🙂

    This chicken recipe is so good! My neighbor wanted the recipe. I did try it another time with Miracle Whip because I didn’t have Mayo and my husband usually prefers it to Mayo. Huge mistake! Only works with Mayo. Too tangy with Miracle Whip. Works great as it is! We love the recipe just like it is! Thank you!

    I put it in for the right time, and temperature. 20 minutes has passed, and it’s still pink! Added 15 more minutes to start off. Hopefully, it will be done my then, everything else I made for dinner was done at the 20 minute mark…

      I am sorry if the chicken breasts didn’t cook on time for your dinner meal. Please note that variations in oven temp and the thickness of the chicken can affect cook times. The time provided as an approximation of what worked for me and as the recipe states, 20 minutes or until thermometer inserted reads 165 F.

      One of my sons is allergic to eggs, so he can’t have the mayo. Whenever a recipe calls for mayo I substitute with plain yogurt. This looks really good; anything with cheese is usually a winner with my oldest son. I think I will be trying it this week. 😀

    I just made this for my parents. I didn’t think they would like it, but they did. They loved it! My Dad told me to give the recipe to my mom. I’m so happy that they loved the meal I made them. I searved it with a zucchini and tomato bake and rice pilaf. Also, I made the chicken with an Italian cheese blend and it was so good! I can’t wait to make this recipe for my boyfriend. Thank you!!

    Looks so tender and irresistible. I’ve used a simple mix of mayo and garlic on swordfish before grilling and it has a magical effect – so tender! I’ve never hear of this trick for chicken but I will definitely give it a try – so easy!! Thanks Lalaine.

    I had to look twice at the chicken after reading the recipe. I cannot believe that this is skinless chicken. The mixture looks just like skin. My family would love the coating you created. I will definitely have to store this idea for future use.

    I’ve always heard about that mayo trick, but never tried it. You’re right though — that chicken looks moist and tender – and that’s hard to do with a boneless skinless breast! I’m impressed!
