Minty Watermelon Cooler

I drink 5 to 6 cans of Diet Coke everyday. I know it’s not healthy, my kidneys despise me. G has been blending pitchers of this minty watermelon cooler to encourage me to hydrate properly and I gotta say, it’s working. A pitcher in the fridge keeps well for a few days so I am able to readily enjoy a glass anytime. This fruit cooler is so minty and so refreshing with all the flavors of summer. And the best part is, adding a swig or two of vodka or rum easily pumps it up for adult fun. Enjoy!

Yield: 4 Servings
  • 4 to 5 cups seedless watermelon, cubed
  • 5 to 6 fresh mint leaves
  • juice from 2 limes
  • ¼ cup vodka or rum (optional)
  1. In a blender, combine watermelon, mint and juice of lime and process until blended. Transfer into a pitcher and pour over ice to serve.
  2. If using, add vodka or rum to pitcher and stir to combine.
