Minty Watermelon Cooler

I drink 5 to 6 cans of Diet Coke everyday. I drink it so much my dietary staff gave me for my birthday a 7-Eleven insulated jug filled with 1 liter and I consumed the stuff  in one sitting. I know, I know. It’s not healthy, my kidneys despise me. G has been blending pitchers of this watermelon cooler almost daily to encourage me to hydrate properly and I gotta say,  it’s working. This fruit cooler is so minty, so refreshing with all the flavors of summer and I can readily enjoy a glass as it keeps well in the refrigerator for at least a few days. And the coolest thing about this cooler, it’s kid-friendly but adding a swig or two of vodka or rum easily pumps it up for adult fun.

Minty Watermelon Cooler

Prep Time: 5 minutes

Yield: 4 Servings

Minty Watermelon Cooler

Ingredients

  • 4 to 5 cups seedless watermelon, cubed
  • 5 to 6 fresh mint leaves
  • juice from 2 limes
  • 1/4 cup vodka or rum (optional)

Instructions

  1. In a blender, combine watermelon, mint and juice of lime and process until blended. Transfer into a pitcher and pour over ice to serve.
  2. If using, add vodka or rum to pitcher and stir to combine.
