After weathering triple-digit temperatures in Vegas last week, I promised myself I will be more appreciative and will no longer whine about Southern California weather. But OMG, ninety degrees today, I spent the whole afternoon sprawled out like a sloth in our patio with a gallon-size jug of watermelon cooler to keep me company.
Come to think of it, was that even a bad thing? I actually enjoyed doing nothing except take sips gulps of my drink.
This minty watermelon cooler is a super refreshing drink you’d want all summer long. With fresh watermelon, lime juice, and mint blended together, it’s a delicious way to beat the heat. If you want something a little more grown-up, a few splashes of rum or vodka will easily pump this up for adult fun.
Other than being cool and refreshing, it’s also a healthy way to hydrate. You get all the delicious flavors of summer at less than 50 calories per serving. Without the vodka, of course. 🙂

Ingredients
- 4 cups seedless watermelon, cubed
- 4 fresh mint leaves
- 2 limes, juiced
- 1/4 cup vodka or rum
Instructions
- In a blender, combine watermelon, mint leaves, and lime juice. Process until blended.
